Ingredients

  • 2 English Muffins
  • 1 can White Albacore Tuna
  • 1/2 celery stalk, diced
  • 1/2 small carrot, diced
  • 2 tablespoons nonfat yogurt
  • 2 tablespoons light mayo
  • 3 slices of American cheese or favorite cheese
  • Sea salt and black pepper to taste

  • Optional: squeeze 1/2 lemon, diced pickles and juice

Sometimes, I crave a tuna melt. It reminds me of when I was growing up, and my mom used to make these for me. It’s warm, nourishing, tasty and nutritious! Give my tuna melt a try and if you cut the cheese slices into tiny triangles and add some fresh chives as a garnish, it will also be a work of art!

Drain the tuna and add to a bowl. Cut up chunks with a fork and knife. Add the mayo and nonfat yogurt. Mix well to combine. If its still a little dry add more mayo. Then add diced carrot, diced celery and seasonings to your liking.  Sometimes I add chopped pickle to and a little pickle juice. A squeeze of half of a lemon is optional.

Set the oven to 375 degrees. Place the halved English muffins onto a baking sheet lined with parchment paper. Heat for a few minutes, then take it out of the oven and place 1 tiny scoop of the prepared tuna on each half of English muffin, yielding 4 halves. Next, cut the slice of American cheese into tiny triangles, and place 2 triangles artfully onto each half of English muffin. Heat for roughly 5 minutes or until cheese starts to just melt.

Garnish with fresh chives. Enjoy!
