Ingredients

  • 1 cup old-fashioned oats, pulsated to break it up + 1/4 cup left whole
  • 2 tablespoons flax seeds
  • 1/2 chunky almond butter
  • 1 tablespoon honey
  • handful of golden raisins, soak in hot water
  • a sprinkle of cinnamon, ginger, and ground sea salt
  • a good quality extra virgin olive oil
  • optional: finely crushed almonds

Everyone is eating energy bites, but me! So I thought I’d try out a recipe and have some fun. These bites are great! They are satisfying, tasty, and healthy! Here are the directions.

Start by measuring 1 1/4 cups old-fashioned oats and add 1 cup to the blender. Reserve the 1/4 cup. Then add in two tablespoons or more of flax seeds. Then pulsate on high for 15 seconds, just enough time to break up the texture of the seeds and oats, but not long enough to create a powder-like consistency. This is a great trick! Now, if you like the texture of both then by all means skip this step.

Next,  add the pulsated oats/flax and the 1/4 cup of whole oats to a bowl.  Mix in about 1/2 cup of slightly warmed almond butter, 1 tablespoon of honey, sea salt, ginger, cinnamon, and a large handful of golden raisins. Be sure to soak the raisins in hot water first for 5-10 minutes, it will moisten them.

Mix all the ingredients with clean hands until all are well incorporated. You can add a drizzle of olive oil as well or more almond butter if it’s still a bit dry.

Place in the refrigerator for 10 minutes, no more because this will dry out! Next, create the balls. Use one heaping teaspoon to create the balls. This recipe will yield about 10 energy bites. Store in an air tight container in the frig for two days. If these dry out, try to place them in the microwave for a few seconds, maybe 5 to soften.

They disappear fast! Make two batches. I have pulsated more of the oats/flax than I need to have some in reserve for later in the week. Place excess in a mason jar.
