Ingredients

  • 1 (17.6 ounce) package of precooked brown lentils (I used the ones from Trader Joe's)
  • 3 tablespoons heavy whipping cream
  • a small chunk of Parmigiano-Reggiano cheese
  • Salt, pepper, garlic powder, & onion powder
  • 2 cups chopped kale, discard stem
  • 1 1/2 cups water and more as needed to loosen
  • Drizzle chili oil
  • medium-sized enameled coated skillet

This has such a delicious creamy taste. It’s a wonderful side to a main meal and would be special enough to serve for a holiday or celebratory meal. Creamy, cheesy, earthy and so good!

Here are the simple directions.

Heat the pre-cooked brown lentils according to package directions. If you are soaking them overnight, prep one day early.

In a medium-sized enameled coated skillet, add the lentils and 1 1/2 cups of water. (The water will evaporate.) Season with a good amount of onion powder, garlic powder and salt and black pepper to impart some much needed flavor into these lentils.  Add the chopped kale. Allow this to simmer and cook down about 30 minutes. Then you can swirl in the cream, and add some chili oil for a spicy kick.

Let this continue to cook an additional 30 minutes to meld flavors together. Add more water as needed. Right before serving add a good shaving of cheese off the heat.

Serve warm and with some bread for dipping!
