Ingredients

  • 5 organic carrots, stem intact
  • 1 package turkey bacon, slices halved lengthwise
  • 1/4 cup sugar-free maple syrup
  • 1 teaspoon chili oil
  • 1/2 - 1 teaspoon smoked paprika
  • Sea salt, black pepper, & garlic powder to taste
  • A good quality olive oil
  • Large enameled coated cast iron skillet
  • Pastry brush

Preheat the oven to 425 degrees.

Prepare carrots by thoroughly washing and scrubbing them. If you are using organic carrots you do not need to peel, otherwise I highly recommended peeling them. Cut off the stems, leaving only about 2-inch of the stem intact for visual appeal. Wash the greens and dry. These can be used for the platter for a visual pop of color.

Halve the carrots lengthwise. Cut turkey bacon (or bacon) in half lengthwise. Wrap the bacon around the carrot and place onto the skillet. If the carrots are long, you may need two half strips to wrap it.

In a small bowl, mix maple syrup, chili oil, smoked paprika, garlic powder, salt and pepper. Then brush the mixture onto the bacon-wrapped carrots. Drizzle with olive oil.

Roast the carrots in the oven for 25 minutes. Then, brush with more maple syrup. Roast an additional 5 minutes.

If the ends start to burn, trim them.

Display on a rectangular or square platter and add the greens.
