If you are hosting a party, the kids will love these Taco Boats loaded with seasoned ground beef and cheese. If you prefer to do a vegetarian version you may load them with chopped cooked broccoli and then add cheese to the top. These are very tasty and paired with a sour cream and a side of rice, make a nice dinner for the family.
Start by preheating your oven to 350 degrees.
Next, drizzle some olive oil in a pan. Sauté the chopped garlic and diced onions for 3 minutes just until translucent, don’t let them brown. Then add in the ground beef, breaking it up with a flat edge spoon. Add in some ground sea salt and ground pepper.
Dice the Roma tomato and add that into the meat mixture along with a small handful of chopped parsley along with a squeeze of a lemon. The parsley and lemon will provide a fresh taste to the beef. Once the beef is all brown, drain it into a colander until all the moisture is released, very important step. This will take about 20 minutes or longer. You may press the moisture out as well. This can be prepped the night before as well!
Next, line a baking sheet with aluminum foil or parchment paper. Place 10 taco boats onto the baking sheet. Add in 4 heaping tablespoons of the ground beef mixture into each bowl. There will be enough meat to fill 10 small taco boats.
Then top each bowl with 2 heaping tablespoons of finely shredded cheese. For garnish add some chopped scallions and chives.
Bake in the oven according to the directions on the taco boat box. Usually 325 degrees for roughly 8 minutes or until the cheese slightly starts to melt as seem in this photo.
Arrange the taco boats on a platter and add some more chives and scallions as a garnish and a sprinkle of paprika as well all around. Serve with a dollop of sour cream! Enjoy!
