This is a wonderful appetizer to serve at a summer party. Heat will compromise the taste and texture of most cheeses, but not goat cheese which is just as good chilled as it is warmed. Here are the super simple directions:

Start by placing the goat cheese log onto a large dinner plate. Add the Italian herbs and dried parsley to the log.  Roll the log as you sprinkle the seasonings, covering it completely. Last add the ground sea salt, cracked black pepper (optional) and red chili flakes to taste. Transfer log to a piece of parchment paper.

Add a tiny drizzle of olive oil, and roll the log to evenly disperse the oil. Then wrap it in the parchment paper and refrigerate for 30 minutes. This will last in the fridge for a few days, so feel free to make it 1 or 2 days in advance of a party. This is also great for a holiday gathering.

Serve room temperature alongside some multi-grain crackers and drizzle of honey. Guests can smear the herbed goat cheese onto the crackers and then drizzle the honey on top. My guests absolutely loved this combination, but feel free to experiment with different dried herbs.

Enjoy!
