Ingredients

  • 1 cup marinated artichoke hearts, drained not rinsed (retain 1 tablespoon liquid)
  • 1/4 cup Kalamata olives + 1 tablespoon liquid
  • 2 cups frozen chopped spinach, only need roughly 1/3 cup strained
  • 1 fresh garlic clove
  • 1 (5.3-ounce) container nonfat Greek yogurt
  • 2 tablespoon nonfat or low-fat sour cream
  • 2 tablespoons fat free Feta cheese or shredded part-skim mozzarella
  • Toppings: scallions or chives, more feta, and chopped olives
  • High-speed blender
  • Cheesecloth
  • Small baking dish

Dips are usually filled with calories and saturated fats, not this one. It’s very healthy and delicious! This is very easy and simple to prepare. Mix and bake! Here are the easy directions.

Note: Most of my recipes serve 4-6, this one is a smaller recipe that serves 2. If you are serving more than that, just double the recipe.

Preheat oven to 350 degrees.

Start by cooking the spinach. Place 2 cups of frozen chopped spinach in the microwave with 1 tablespoon of the Kalamata olive juice and heat for 2 minutes. It will continue to cook in the oven. Then strain the spinach through a cheesecloth and measure 1/3 cup and use it for the dip. You may have a little leftover.

In a high-speed blender, add the marinated artichokes, plus 1 tablespoon of the oil form the drained artichokes, spinach, and blend until combined but still chunky. The add the olives and blend just for a few seconds.

Spoon the mixture into a small oven-safe dish. Add the yogurt and sour cream mix along with the feta cheese.

Note: Feta cheese will not melt, so if you want this gooier and cheesey go with the mozzarella cheese.

Bake in the oven for 20 minutes until bubbly.

Garnish with a tiny sprinkle of feta, diced scallions or fresh chives, and chopped olives. Simple & delicious and great for a party of 2!
