Ingredients

  • 1/2 - 3/4 cup quick grits
  • 2 cups water
  • 1/4 corn (if it's in season cook a cob and cut it off the cob or use frozen sweet corn)
  • 1/4 cup parmesan cheese
  • a good quality extra virgin olive oil
  • sea salt to taste
  • parsley flakes
  • optional: sauteed shrimp

This is a great meal for a cold winter’s day! Sometimes you want something hearty and delicious that will fill you up and this is one of those meals.

Here are the directions.

Start by boiling 2 cups of water in a small pot. Then, dice a half of a sweet onion, and saute in olive oil until translucent. Once the onion is softened, add about 1/4 cup of fresh corn and saute for a few minutes. Once the water comes to a boil, add  about 1/2 – 3/4 cup of quick Grits (I like Quaker Oats). Stir the grits frequently and keep the heat on low and the lid on while it’s cooking, about 5-6 minutes.  Add a sprinkle of sea salt.  You can stir in about 2 tablespoons of whole milk  and a teaspoon of butter to make it creamy.

Once the grits are done, add them to a nonstick frying pan and cook about 10 minutes. While it is cooking, add about 1/4 cup of grated parmesan cheese, keep heat on low. Once it has simmered for about 10 minutes, taste it and be sure it has the right balance of flavors.  You might want to add a little more cheese at this point. Then pour some into a large bowl and add parsley flakes or fresh parsley, and more cheese on top. This is heartwarming and so yummy. It is a great meal if you are on a budget too!

You can serve this for dinner with garlic and butter sautéed shrimp like they do in the South, top with scallions. YUMMY!
