  • 2 ½ cups canned chick peas, rinsed and drained (I really love Goya beans)
  • ½ cup almond butter
  • 2 teaspoons vanilla
  • Hint of cinnamon
  • 1 teaspoon freshly brewed coffee, cooled
  • 2 tablespoons whole old-fashioned oats
  • 2 tablespoons honey
  • 2 tablespoons cocoa powder, special dark chocolate
  • Ground sea salt to taste
  • A handful of semi-sweet mini chocolate chips
  • Optional: cookies and cream sprinkles or sweetened coconut flakes

These energy bites are satisfying and very tasty. Just one bite and you will be hooked, and will start making these every week like me. Here are the simple directions.

Start by pulsating 2 1/2 cups of rinsed, canned chick peas in a high speed blender adding a little drizzle of olive oil. Don’t over mix this, otherwise you will have a hummus consistency. You want it a bit chunky. Even if you get a few whole chickpeas in this, just pick them out or mash them.

Next, add that to a bowl along with the other ingredients: 1/2 cup of creamy almond butter (salted), 2 teaspoons vanilla extract, 1 teaspoon freshly brewed coffee (cooled), 2 tablespoons honey, 2 tablespoons cocoa powder (special dark chocolate) a sprinkle of cinnamon, a few shakes of ground sea salt, and 2 tablespoons of whole oats. Mix these ingredients well, than add in a small handful of semi-sweet mini chocolate chips. If you find these are still too wet, add a bit more oats.

Place in the frig for 20 minutes. Then roll into balls which should yield about 12 mini bites. I prefer to cover them in a sprinkle like a cookies and cream sprinkle, as they tend to be very wet otherwise. Another healthier option is to roll in coconut flakes (sweetened or unsweetened). Place in a mini cupcake holder for easy eating. Store in the refrigerator for up to 5 days.
