Ingredients

  • 1 (10 ounce) bag of seasoned frozen cauliflower florets. ie Ranch or Garlic
  • 3/4 cup drained chick peas
  • 1/2 cup ground chick pea (garbanzo bean) flour
  • 2 heaping tablespoons of a spreadable herbed cheese. (I like Aloutte reduced fat cheese)
  • sea salt and dried oregano
  • prepared tomato sauce
  • 1 package shredded mozzarella cheese

These days everyone is looking for alternatives to a regular white flour pizza crust, and this one is a wonderful alternative as it’s made with cauliflower, chick pea flour and drained chick peas along with some herbed cheese to give it extra flavor. This is a winner and after one bite you will not be able to stop eating it!

Here are a few things to keep in mind to make this recipe a success. First, be extra careful flipping the crust to cook on the other side. Use a piece of parchment paper to flip it. Also, don’t overload the toppings, the crust alone is amazing and a little bit goes a long way in terms of toppings.  As with any recipe, you want to start with good building blocks, in this case, a magnificent crust, then add your toppings as you wish! Mine were very simple: prepared tomato sauce, shredded mozzarella cheese with oregano, a drizzle of olive oil, and a sprinkle of sea salt! Yum!

Here are the directions:

Start by preheating the oven to 400 degrees. Next, heat the cauliflower according to the directions on bag, but under cook it by one minute.  Let this cool. Then add the cauliflower to a high speed blender or food processor along with 3/4 cup of drained and rinsed chick peas. Then blend until smooth and no lumps remain (or sometimes you’ll find a few whole chick peas, just pick them out).  Blend for roughly 2 minutes. Use a strainer to strain the mixture oven a large bowl. Press the mixture against the strainer and add all the mixture sitting inside the strainer into another large bowl. Discard the rest.

Then add in 1/2 cup of chick pea flour (or white flour), and 2 heaping tablespoons of herbed spreadable soft cheese. In lieu of herbed spreadable cheese, I have used a sprinkle of shredded mozzarella and it works great too! You may also try an herbed goat cheese. If you use a plain soft cheese, be sure to season the mixture a lot!! Next, add in a sprinkle of sea salt. Mix until ingredients are all combined.

Place a piece of parchment paper onto the pizza tin. SPREAD the mixture out forming a circle. Do this using a spatula! Heat the crust in the oven for 10 minutes. You cannot roll out this pizza dough.

Then carefully using another piece of parchment paper, flip it and pull off the parchment paper from the bottom, that is now on the top! See picture below. You shouldn’t come in contact with the pan, just hold the ends of the parchment paper. Do this with care, and very slowly!

Next, place the pizza crust back into the oven for 4-5 minutes. Add two small ladles of sauce and spread it onto the crust. Then add two handfuls of shredded Mozzarella cheese. Also a sprinkle of oregano, a drizzle of olive oil, and sea salt! Heat in oven for 4-5 minutes just until cheese begins to melt!

Let sit 5 minutes as the crust will get more firm. You will LOVE this pizza! Enjoy!
