Ingredients

  • 2 medium sized zucchinis (I prefer organic)
  • 1 large jar of prepared tomato sauce that has a nice flavor and seasoning ( I use Rao's Marinara Sauce)
  • 1 large bag of finely shredded parmesan cheese
  • 1 medium size oven safe dish
  • Extra virgin olive oil

This is a delicious vegetarian dish for your family! I like that you can stack the zucchinis, one on top of the other and once it cools you can easily serve the stacks. This is a low carb dish and it will not disappoint! Serve with homemade crusty Italian bread (recipe in my cookbook!) and a salad will round out this meal. Here are the easy directions.

Start by setting the oven to 375 degrees. Wash and dry the zucchini. Slice the zucchini, skin on, into 1/4 inch slices. Place the slices in the bottom of the dish, then add some sauce and a sprinkle of Parmesan cheese to each slice. Then stack another slice one on top of the other and repeat the process: sauce and cheese, until you reach the top then layer with cheese all over the top. You may use as much or as little cheese as you like.

Place uncovered in the oven for 50-55 minutes until bubbly. Let it cool 10 minutes and serve. Great with crusty bread to dip in the sauce. Basil ribbons are a nice garnish if you wish. Enjoy!
