Ingredients

  • 1 1/2 cups whole oats
  • 1 tablespoon Dose & Co. Vanilla Collagen and Protein Powder (optional)
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon pumpkin pie spice
  • 1 teaspoon baking powder
  • 1 cup nonfat milk (or milk substitute)
  • 1 large egg white
  • 2 tablespoons olive oil
  • 2 tablespoons sugar-free maple syrup
  • 1 heaping teaspoons ground flaxseed
  • 1 large banana, sliced lengthwise
  • drizzle honey
  • 7 1/2 by 10 inches, 2 3/4 inches high baking dish that can withstand high heat
  • toppings: blueberries, sliced honey roasted almonds, nonfat Greek yogurt, maple syrup
  • optional: sprinkle with sugar right before it goes in the broiler

I started adding oatmeal into my daily morning routine this year. I also like adding Dose & Co. Collagen and Protein Powders to my morning routine, especially post-workout because the added protein is great for maintaining muscle and the collagen is great for longer hair and nails, and who doesn’t want that!? ha-ha!

I needed a change from cooking oatmeal on the stovetop, and that’s when I created this super easy oatmeal bake. It’s all the ingredients you need to maintain good nutrition in one delicious bite! The bananas on top with a drizzle of honey give this dish an added sweetness from the caramelization. Top with your favorites adds-ons like sliced almonds, blueberries (a powerhouse fruit) or just eat it as it is. Delicious and nutritious! You can even prepare this the night before, add more milk in the morning and pop it in the oven while you are getting ready for work or school. Here are the simple directions.

Preheat the oven to 350 degrees.

In a small baking dish, add the oats, collagen protein powder, cinnamon, pumpkin pie spice, baking powder, and ground flaxseed and mix with a fork.

In a separate bowl, add the milk, egg white, maple syrup, and olive oil and mix until frothy. Pour it over the oat mixture and mix with a fork until well combined. If you feel it needs more liquid add a tiny drizzle more of milk. The oats will absorb the liquid quickly.

Next, add the sliced banana to the top and top with a sprinkling of cinnamon and pumpkin pie spice and a good drizzle of honey.

Bake in the oven for 40 minutes until cooked and then broil for 1 minute to caramelize the bananas. Optional step is to add a tablespoon of granulated sugar to top of bananas before it goes under the broiler. Allow to cool, then scoop the oatmeal into a bowl and add the toppings.  So delicious! This is best right out of the oven.
