This is the most delicious deli-style sandwich that your family will love. I don’t often serve corned beef unless it’s St. Patty’s Day, so I opted to used roast beef, it’s a lot less salty. This is a perfect sandwich combo that my family raves over. Feel free to load it up with more roast beef slices and stack this sandwich even higher. I feel that 4 slices per sandwich is enough. The thousand island dressing really makes the sandwich, but if you don’t have any, make your own with equal parts mayonnaise, ketchup, and a little relish.
Here are the simple directions for sandwich assembly.
Place the bread slices on a cutting board. Spread 1 tablespoon of dressing on each slice of bread, cover the entire slice.
For each individual sandwich you will need in this order on 1 slice of bread:
2 slices of swiss, 4 slices of roast beef (or corned beef or pastrami), 1/4 cup of drained sauerkraut, and last top with 2 remaining slices of swiss. Top with slice of bread and add 1 tablespoon of butter to the outside of bread slice. Sear the sandwich, butter side down, for 4 minutes on low heat. You may add a lid to encapsulate the heat. Gently flip the sandwich and add another tablespoon of butter. Heat and cook an additional 4 minutes or until the cheese is melted. Repeat the process with the other sandwich.
Serve warm and enjoy!
