Ingredients

  • Graham Cracker Crust
  • 10 Double Graham Crackers crushed
  • 1/4 cup white sugar
  • 1/4 cup melted butter
  • Cheesecake Recipe
  • 2- 8 ounce pkg. cream cheese softened
  • 1 lb. cottage cheese
  • 1 1/2 cup white sugar
  • 4 large eggs slightly beaten
  • 3 tablespoons cornstarch
  • 3 tablespoons flour
  • 1 1/2 tablespoon lemon juice
  • 1 teaspoon grated lemon rind
  • 1 teaspoon vanilla extract
  • 1/2 cup margarine melted
  • 1 pt. sour cream
  • 10 inch springform pan
  • 1 can Cherry pie filling (optional)

This is my Aunt Kitty’s cherry cheesecake recipe. You can omit the cherries and just serve the cheesecake.  My Aunt and Uncle would host a New Year’s day party every year and would serve this cake.  Your company will love this cheesecake and will rave about it for years to come! It’s worth all the steps it takes to make it. Here are the directions.

Start by filling a 10 inch springform pan with water and let it sit on the counter. Check for leaks!  You don’t want it to leak in your oven, so be sure.  Then, set your oven at 350 degrees and start to prep your crust.  Crush 10 double graham crackers, and mix in 1/4 cup white sugar and 1/4 cup melted butter. Then with the back of a spoon smooth the crust into the pan. You can butter the pan first.

Now using an electric mixer, mix together the cream cheese, cottage cheese, and blend well on a high speed, gradually beat in the sugar then the eggs.  Lower the speed and add in the cornstarch, flour, lemon juice, rind and vanilla.  Lastly add in the melted margarine and sour cream. Be sure the margarine is not too hot because it will curdle the sour cream. Beat the ingredients at a high speed until smooth and creamy, and then pour into the pan.

Bake in the oven at 350 degrees for 1 hour and 10 minutes, then let it sit for 2 hours with the oven off.  Let it cool completely out of the oven for 2 additional hours.  Gently take a butter knife and go all around the edges of the pan to release the cake from the sides of the pan. Refrigerate and serve.  Now is the time to add the cherries to the top of the cake unless you prefer to serve without or serve each piece with a drizzle of the cherry sauce and a few cherries for a nice presentation.
