This is not your typical turkey and cheese sandwich that you would send to school with the kids. This is a little bit healthier and its served hot out of the frying pan. So this sandwich is great for the weekends and a good way to use up that leftover turkey breast. It will give you a few crunchy and creamy surprises. I use a really good whole wheat bread that is super healthy. However, you can use what you have on hand, white bread is fine (my son can only eat white bread) and the outcome will be the same. Here are the directions.
Start by warming your frying pan to get it hot. Then, set up all your ingredients: the bread, the hummus, a few bread and butter pickles (the crunchy surprise), three slices of thinly cut oven roasted turkey breast, 2 slices of cheese, a tablespoon of butter and some good extra virgin olive oil. Also, take out 1 large egg and put it in a bowl because you will need that. You see I said there is a creamy surprise, a sunny-side up egg. It will ooze down the sides of the sandwich, just delish!
Put butter on one side of the slice of bread. Then on the other side spread the Dillish Hummus. I make a batch of this hummus every week sometimes twice a week and we use it on sandwiches and chips. Put the bread, butter side down, in the frying pan for a few minutes and let the butter melt. Then flip it onto the side with the hummus and let that side warm for about 1 minute. Take it off the frying pan, leave the heat on very low.
Then assemble the sandwich. Start by adding a slice of cheese to the side of the bread that has the hummus – one slice for each side. Then add the turkey to one side and the two pickles to the other side and sandwich it together. Add it back to the pan and drizzle olive oil over it. Keep the pan on medium to low. If it’s too low it will take a while to melt the cheese. Keep about 3 minutes on each side and flip it once and cook another few minutes on each side.
Then transfer it to a plate. Crack the egg into the bowl, Add a drizzle of olive oil or butter to the pan and cook the egg for two minutes or until the center gets less runny then gently flip it. Don’t forget to wash your hands after handling raw egg! Cook on the other side for two minutes. I like the egg a bit solid. Add pepper and salt.
Then open up the sandwich and slide the egg onto the turkey and gently close it together – you don’t want the yolk to break yet. Using a clean spatula put the sandwich back into the frying pan with a drizzle of olive oil and let it heat two minutes.
Optional: you may add some mashed avocado on the bread as well.
Once the cheese looks melted, it is ready to eat. Put the sandwich onto a cutting board or plate and cut it in half, now the yolk will break! Add some greens to the plate and a pickle and you have yourself a healthy and warm lunch for a busy Saturday or Sunday afternoon. YUM!
