Ingredients

  • 3 cups oats, pulsed into a flour consistency
  • 3-4 heaping teaspoons flaxmeal
  • 1 1/2 bananas mashed (about 1 cup) may substitute apple sauce 3/4 cup
  • 1 cup almond butter (or peanut butter)
  • 3 teaspoons vanilla extract
  • 2 teaspoons coconut oil
  • 4 scoops vanilla protein powder (or more)
  • 1/4 cup or more maple syrup ( I use sugar-free maple syrup)
  • 1/4 cup mini chocolate chips (vanilla or chocolate)
  • Topping: 1/2 cup chocolate chips and 1/2 teaspoon coconut oil, melted

These are a great protein bar option and are good for on-the-go snacking. No two protein powders are alike, so find one that has clean ingredients that you like in your shakes and use that. If it’s unflavored, you’ll have to work at getting the taste profile down using vanilla extract and more maple syrup. I hope you love them as much as my family and I do.

Mix the wet ingredients then add pulsed oats and flax meal. Mix until it comes together. It will be sticky. Add the chocolate chips.

Dump into a rectangular loaf pan lined with parchment paper and spread it out using a second piece of parchment paper.

Set in fridge for one hour to form.

Take it out and drizzle chocolate on top and refrigerate again.

After about 30 minutes, they should be ready to cut and eat. I cut them into 27 small bars, but you can make them larger, if you wish. I like to put them into individual bags for easy on-the-go snacking. They freeze well too.
