When I was a little girl my Dad and I would go to the local farmer’s market at the beach where we owned a family home, and we would buy black mission figs. It was our little tradition every summer and also a special treat for me. To this day, I think of my dad when I eat a fig. He would really like this pizza combination using fresh figs. It’s a savory and sweet combo with the creamy ricotta cheese along side the salty feta cheese and sweet figs. You may also try an herbed goat cheese as well instead of the feta cheese.
This is a great meal. My homemade pizza recipe will yield one large pizza which will feed roughly four people, maybe five. Adding salad to the top of the pizza gives more nutrients to this already healthy pizza and the balsamic glaze sauce sends this pizza over the top. It is especially good in the summer months when figs are in season in my area along the East Coast. I promise you will love it!

Another option is to use a pre-made pizza crust. I tend to buy the thin crust pizza which is available in most supermarkets, in this case you will make two small thin crust pizzas.
If you are making the pizza dough, you will need enough time to let the dough rise., roughly 3 hours. Once the dough is ready to use, press it out on a flour board using your fingertips, pressing firmly in all directions. You may also use a rolling pin. Place the dough onto a large baking sheet (I use a rectangular one). Line the baking sheet with parchment paper and add a few drizzles of olive oil and spread evenly onto foil, so the pizza does not stick. Press the dough into the pan, and add a drizzle of olive oil to the dough. Set the oven on 450 degrees. You want it really hot.
If you are using a pre-made store-bought crust, set the oven to the directions on the box and bake accordingly. Follow the directions below for the ingredients splitting it between two small pizza crusts.
Prepping your ingredients.
Rinse the figs and quarter each fig, cutting off all hard stems. Cut the onion into slices and each slice into quarters. Sauté the onions on low and cook until translucent, add olive oil and sea salt. Next, drain your olives. You will need a handful, so maybe 20-25 olives, keep these whole.
Measure 2 cups of ricotta. Using a large spoon, spread the ricotta mixture onto the pizza dough, and add a few sprinkles of sea salt and black pepper.
After your onions are done, place them on the pizza spreading them evenly. Next, place the cut figs and whole olives evenly onto pizza. Use a few tablespoons of feta cheese (maybe 3-4) and add to the top of the pizza along with a few good drizzles of olive oil and sea salt.
Place the pizza in the oven set at 450 degrees, bake until golden roughly 18 minutes, than add the salad to the top along with more olive oil. Place back in the oven. Once the pizza is a golden brown color as seen in this photo below – it is done. If you used a store-bought crust, cook according to directions on the box.
As a finishing touch, add some balsamic glaze to each slice and you will have a healthy, well-balanced meal for the family!
