Ingredients

  • 1 cup refried beans (unseasoned)
  • ½ cup light brown sugar, packed
  • ¼ cup sugar-free maple syrup
  • 1/2 cup olive oil
  • ¼ cup creamy peanut butter (or almond butter)
  • 1 large egg
  • 2 tablespoons cocoa powder
  • 1 cup chocolate chips, melted yields roughly ½ cup
  • 1 cup all-purpose flour (or gluten-free flour)
  • 1 teaspoon baking powder
  • A sprinkle of sea salt

Fudgy, decadent, chocolatey, and super tasty! These are absolutely delicious and you must try them~ You cannot detect the presence of the refried beans whatsoever!

Taco Tuesday is a family favorite and we always have some leftover refried beans. I decided to repurpose them and make high-protein brownies. The espresso really amplifies the chocolate flavor in these brownies, so don’t skip it!

Mix all the wet ingredients in the stand mixer bowl. Separately whisk the dry ingredients. Then combine the dry ingredients with the wet ingredients.

Pour the batter into a parchment-lined baking dish and spread it, then top with sea salt.

Bake at 350 degrees for 17 minutes or until firm. Do not overbake.

Let the brownies sit for 15-20 minutes and cut into perfect squares by using a hot knife and wiping clean every time.
