Pizza origins

Margaretta PizzaMy daughter shared this history of the pizza pie with me. In 1889, King Umberto I and Queen Margherita di Savoia of Italy, were vacationing in Naples, Italy (our family is from Naples) and had heard about the excellent pizzas made by a pizzaiolo (pizza maker) named Raffaele Esposito, of Pizzeria Brandi. Peter Reinhard tells in his book, American Pie, “Esposito was invited to prepare the pizza and made, or so it goes, a marinara pizza with anchovies; a bianca, or white pizza, with lard, provolone or creamy caciocavallo cheese, and basil; and a pizza with tomatoes, mozzarella, and basil — red, white, and green in honor of the Italian flag. The queen flipped for the latter, and when Esposito received a note of thanks from the monarch, he dedicated the pizza to her, calling it pizza Margherita.” And there you have the history of the Classic Pizza Margherita.”

I named my twist of the classic pizza margherita after my daughter and call it Margaretta Pizza. It is a mouthwatering pizza that is just as beautiful as it is delicious. Another interesting fact about pizza, is that depending upon which region of Italy you visit, the pizza is different. I have eaten pizza in Florence, Venice, Rome, Milan and Sorrento and they are all different. The pizza in Venice is at room temperature, the pizza we had in Rome came out piping hot and the cheese was perfectly melted, more like the pizza pie we are familiar with in America today. Mange! Blueberries may be tiny, but they are a powerhouse.

BlueberriesThere is nothing more delicious than a slice of warm blueberry pie or blueberry pancakes on a Sunday morning, but what makes it even better is to know the multiple health benefits derived from eating them. They are the number one antioxidants. Antioxidants boosts your immune system, making it stronger and a stronger immune system helps you fight infection. The best way to eat them though is raw and fresh, not cooked, although they taste delicious, frozen is fine too. Food in the raw will give you the best nutritional benefit. Forgetting things lately? Turn to blueberries for a boost in your memory. They will keep your mind sharp and alert. Also, they are known to regulate your blood sugar level. They also aid in fat loss. Blueberries are oh so tiny, but are a powerhouse in the health category.

Hosting a party is right up there with one of my favorite things to do. Feeding guests is in my blood, after all I’m Italian (half, the other half is Swiss and Irish). When I have people over, there is always lots of delicious food to enjoy. But another important aspect of any good party, is in the details. In this photo, I have some party favors displayed. I actually picked these lip balms up at Target for $1.00, and then wrapped them with beautiful ribbons and clear plastic paper, found at Michael’s. The food in this photo is a brunch celebration for my daughter. When I present food, I try to make it beautiful and appealing. I always use my best plates and glassware. I think it’s worth the extra work.

Double Stuffed Baked Potato

Potatoes are the ultimate comfort food in our house. We love everything potatoes: potato gnocchi, potato perogies, mashed potatoes and double stuffed baked potatoes! Mr. Potato head is a cute idea to make with the kids. Make a baked potato, then once it’s cooled a bit, add sour cream to the top, then shredded cheese (orange) on top of the sour cream, so it looks like hair, and broccoli florets as the ears and a carrot for the nose. Don’t forget the eyes! It’s fun for the whole family and everything is so healthy and nutritious. If you are watching your sugar level, then a yam is a better option because white potatoes are high in sugar, but they are still a great source of energy!
