This is a great summer salad when peaches are in season, add creamy and delicious Burrata and send this salad over the top. Here are the simple directions to prepare and assemble this salad so it’s visually appealing as well as tasty. Firm peaches are best for this salad.
Start by washing and drying the peaches. Cut the peaches in half and cut 1/2 inch thick slivers and set aside in a bowl. Next, wash and dry 1/2 box of the arugula and 1/2 box baby spinach. Place the greens onto a large white platter as seen here. Next, tear up a few mint leaves and place through out the greens. Mint is tough, so be sure you have tiny pieces torn.
Next, wash the mini heirloom tomatoes and cut in half. Add the peaches and tomatoes on top of the greens. Place the remaining mint as a garnish. Now mix the dressing combining: apple cider vinegar, a half of peach squeezed, mint leaves, olive oil, honey and dried herbs. Place ingredients inside a mason jar with a tight fitting lid and shake well. Add to salad right before serving.
Optional: Add three large Burrata balls as seen in the photo, break open before serving salad. This is a very delicious salad that your friends and family will remember for years to come. Enjoy!
