This is a great appetizer to serve at a party. This is oooey, gooey, cheesy and beef goodness. You can use tortilla chips to scoop up the meat. My kids and husband eat this up in 15 minutes. Easy to make and serve in the same pan you prepare it in.
First, you will need a medium sized cast iron skillet. Start by browning the meat, roughly 6-8 minutes. Add in salt and pepper to taste. I use ground sea salt. Then add in 1/2 of the taco seasoning packet, 1/2 jar of salsa and 1/4 of a can of whole peeled tomatoes. Break the tomatoes up with the spoon. Mix everything together. Last add the cheese on top and then transfer the pan to the oven to bake.
The oven should be set at 350 degrees. Let it bake for roughly 15 minutes or until the cheese is melted and bubbly. Garnish with chopped scallions for a pop of color and a dollop of sour cream on the side. My family scoops it up with the tortilla chips, but you can stuff this inside a taco as well. Whatever you like. This is a winner!!!
