Ingredients

  • 2 large beefsteak tomatoes
  • 2 peppers red or green
  • 1 cucumber
  • 1 red onion
  • 1/2 cup or more of Kalamata Olives
  • a few tablespoons of capers
  • 1/2 - 1 cup feta cheese chunks
  • 1 tablespoon of red wine vinegar
  • extra virgin olive oil
  • salt
  • pepper
  • 1/2 teaspoon crushed oregano
  • medium sized white serving tray

This is a traditional Greek salad. Here are the directions.

Wash two large Beefsteak tomatoes, one cucumber, two peppers red or green and dry. Start by cutting the tomatoes into large chunks and set aside. Then peel the cucumber and thinly slice it. Cut the top off the peppers, cut in half and take out the pulp and wash out all of the seeds, then thinly slice the peppers.  Then, thinly slice a red onion. Add all of these ingredients together in a medium white bowl, so the colors pop or arrange them as I did in this photo.

Add to that a few tablespoons of capers, a 1/2 cup or more of Kalamata Olives. Toss with olive oil, salt and pepper as well as crushed oregano. Lastly, add large chunks of feta cheese. You can also add a tablespoon of red wine vinegar. I also added some chick peas for some added protein. Toss the salad right before serving. This salad is healthy, delicious and visually appealing!
