This pan-fried whole wheat turkey & cheddar cheese sandwich aka “the-best-sandwich-on-earth” according to my kids and hubby, is so yummy!!! It works as a warm lunch on the weekends when I typically make it or a dinner during the week served with soup. The crispy bread, warm hummus and crunchy sweet pickles create a wonderful combination of flavors and textures. Add a fried egg and send it over the top! It is not only delicious, but good for you. There is no mayonnaise, no butter and very little cheese. Indulge in this sandwich and it will not disappoint! Make two!!!!!! Here are the easy assembly directions.
Start by drizzling a little olive oil in a medium sized frying pan. Let it warm up then add two slices of whole wheat bread. Let it get toasted, maybe 2-3 minutes on one side. Then take it off the frying pan and spread hummus on the side that is not toasted. Once you have spread the hummus on each slice put the hummus side of the bread down in the frying pan to warm for maybe 2 minutes. Then take it off the pan.
To prepare the hummus follow my Dillish Hummus recipe. You could also add some spinach leaves to the blender to make it colorful and it will complement the taste of the spinach in the sandwich.Here is a photo of my Dillish Hummus, one made according to the directions and one in which I incorporated spinach. Cut the slice of cheese in half and put a half of a slice on the hummus side of the bread. Add the spinach to each slice, then a slice of turkey to each slice. Then add the pickles slices to one side and sandwich it together. The pickles in the middle are the way to go because then they will not make the bread soggy. You can pat them dry, so they aren’t dripping with pickle juice. Add a drizzle of olive oil to the pan, and let it warm and add the sandwich to the frying pan. Let it cook on each side for about 3 minutes or until golden brown, pressing it down with a spatula a few times.
If you prefer a different type of cheese you could use fontina, American or munster. These would work well too. My family prefers the cheddar cheese. If you want to send this sandwich over the top, take it off of the frying pan, and fry an egg in the pan. Then add the egg to the inside of the sandwich. (Don’t forget to wash your hands after handling the raw egg!) Of course it will be very messy, but that’s what makes it fun to eat! Enjoy! Let me know what you think.
