Ingredients

  • 2 tall (6-ounce) champagne flutes or whatever you have on hand
  • 2 tablespoons Rose Simple Syrup (Recipe follows), chilled
  • 2 tablespoons freshly squeeze lemon juice from 1 organic lemon
  • 1 bottle dry brut prosecco, chilled
  • 1 teaspoon St. Germain
  • Rim: sugar, dash of pumpkin pie spice & coriander, +food-grade rose petals
  • Garnish with lemon curls - 2 in each class
  • Rose Simple Syrup:
  • 1/2 cup water
  • 1/2 cup sugar
  • 1 tablespoon food-grade organic rose petals

Rose water, well-known for skin hydration, is also used in popular mixer for cocktails, made using food-grade rose petals. Rose water is also popular for baking and cooking. I have developed a Rose Simple Syrup for this beautiful, aromatic drink that you are going to love. You can use any prosecco, I really like Prosecco Doc Brut or a Rose Prosecco works perfect here. Bellissima Brands are great choices.

Rose Simple Syrup
In a small pot, add equal parts water and sugar, bring it to a boil and stir until the sugar evaporates. Add food-grade organic rose petals, about 1-2 tablespoons and stir. Allow the mixture to steep for up to 1 hour off the heat. Strain the rose petals and allow the Rose Simple Syrup time to cool, then chill in the fridge before you use it in this cocktail.

Make a few lemon twist for this drink. You can add them in last. Set up a plate with sugar, and a dash of pumpkin pie spice or cinnamon + coriander and mix. Add some crushed rose petals. Add the freshly squeezed lemon to a bowl.

Dip each glass in the lemon juice and dredge in the sugar-spice mixture. Be sure you get some rose petals on the rim.

Next, add 4 ounces of prosecco, 1 tablespoon of rose simple syrup + lemon juice, 1/2 teaspoon of St. Germain into each glass. Top off with another once of prosecco.

Note: If you aren’t a fan of the Rose Simple Syrup, you may omit it and add a little more lemon and St. Germain, still yummy!

Garnish with lemon twists.
