This is a great weeknight meal for the family. It is super healthy, very tasty, and easy to prepare. You can serve this in a bowl or in a roasted pepper like I did. I recommend using 93% lean ground turkey. I used 2 frozen garlic cubes from Trader Joe’s which are great if you can find them. Here are the easy directions.
Start by preheating the oven to 425 degrees.
Cut the green bell peppers in half lengthwise or widthwise whichever you prefer. Take out the seeds and rinse. Place the peppers onto a baking sheet lined with parchment paper. Drizzle the peppers with a little olive oil and roast them for about 25 minutes until soft. Then set these aside.
You can prepare the brown rice now or save time and make a microwavable one. You don’t want to overpower the dish with too much rice, so anywhere between 2-3 cups is perfect.
Set up a medium-sized non-stick frying pan that has high sides. Add a drizzle of olive oil to the pan. Add the diced mini peppers to the pan and heat for 2 minutes, then add them to a metal bowl (so they stay warm). Next, add another drizzle of oil to the pan and add the garlic. Heat until garlic breaks up (if you used the frozen cubes) or just a few minutes if using a jarred garlic.
Next, add the ground turkey to the pan and use a flat edge spoon to break up the meat. Keep heat on medium. In the meantime, dice the scallions (light green and white parts only) and chop the cilantro or parsley.
Once the meat is cooked through (about 8 minutes) add seasonings of your choice. We like garlic powder, chili lime seasonings (found at Trader Joe’s), salt and cracked black pepper. If you can’t find the chili lime seasoning, use chili powder and a squeeze of half of a lime. Add the diced peppers, scallions, and cilantro. (save some scallions and cilantro for garnish.) Add the cooked brown rice now. Heat on low for 4 minutes. I will add in an additional drizzle of oil now, but that is optional.
Preparing the Spicy Sauce:
Add a few heaping tablespoons of nonfat Greek yogurt to a bowl, along with a good drizzle of sriracha, and squeeze of half of a lime. Season with chili lime seasoning or chili powder and a dash of garlic powder. Mix until combined.
Optional step: Stuff the peppers with the turkey, brown rice and pepper medley or serve as is in a bowl with a drizzle of sauce. This is such a delicious meal that I think pairs well inside the green bell peppers. I hope you enjoy this dish as much as my family~
