This recipe was my mom’s mother’s recipe. She was of Irish decent, and born in America. My mom had a large family, 8 siblings, and everyone loved the potato salad, and Grandma’s stuffing. Another delicious recipe made with white potatoes which I will share. Potatoes are a great go-to-food for a large family, nourishing and satisfying. I adapted it a little bit, since we don’t really use mayonnaise. I hope you enjoy it, and bring it to your next picnic or party.

You will need about 8 large red skinned potatoes, about the same size. Wash really well and scrub with a vegetable scrubber. Dry them, and cut in half. Boil for about 15-20 minutes or until a fork pierces them easily. Drain them in a colander, and let them cool completely.

Once cooled you can remove the skin and cut them into bite size chunks. You can leave skin on too. It depends on your preference. The red skinned potatoes and the bright green dill are a beautiful combination of colors though.

Dice up some fresh dill a few springs, and a medium red onion, and add that to the cooled potatoes. Then add about 2 tablespoons of apple cider vinegar and 1/4 cup of extra virgin olive oil, and a dash of table salt. Mix well and then add a dash of some sea salt. Taste it! This is even more amazing the next day!!! Add a little more vinegar and a drizzle of olive oil the next day.
