Ingredients

  • 2 cups all-purpose flour
  • 1 cup Golden whole wheat flour
  • 1/2 cup granulated sugar
  • 1 teaspoon table salt
  • 1 tablespoon baking powder
  • 1 (11-ounce) Guinness beer "draught stout", use about 7 ounces
  • 1 large egg
  • 1/4 cup buttermilk
  • 4 tablespoons salted butter, melted
  • 1/2 cup large yellow and dark raisins (I used the large ones)
  • 1 tablespoon caraway seeds (or more)
  • 2 tablespoon honey
  • topping: 2 tablespoons salted butter and 1 1/2 tablespoons granulated sugar

This is a newly developed recipe for St. Patty’s Day. My family is Irish, but we never had a recipe for Irish Soda Bread, so I decided to create one. After Sydney came back from  Ireland on a PT school trip, she told me all about the dark bread made with Guinness. I decided I’d create an Irish Soda bread using Guinness beer which my family loves. This is a variation of Irish soda bread and will not taste exactly the same but will have some similar elements like raisins, caraway seeds, buttermilk, a blend of flours, butter, eggs and sugar. I hope you love it as much as we do.

In a large bowl, combine all the ingredients. Mix everything until is wet. You should have some beer leftover, about 4 ounces. Dump the dough into a cast iron skillet lined with parchment paper. It can be shaped into a circular loaf. Top the loaf with slices of the butter and sprinkle on the sugar.

Preheat the oven to 350 degrees. Bake until golden brown, roughly 50 minutes.

This is the easiest recipe, that takes quick prep time and no yeast. I promise you will love it!
