Ingredients

  • 1 (20-ounce) package of frozen or store-bought tortellini (green and white)
  • Store-bought pesto (or homemade, recommended)
  • 1 (8-ounce) container mozzarella balls in oil, drained but not rinsed
  • 1 (pint) container cherry tomatoes, halved
  • Optional, pepperoni (can use turkey pepperoni)

This salad is one of those crowd pleasers. It’s great for a picnic or family gathering when you have to feed a large crowd. It takes minimal effort and has an incredible taste.

It’s a great salad to make in the summer when you can make homemade pesto from the basil and parsley in your garden. Pesto is an easy recipe and will truly add a freshness to this dish. With that said, you may also use a store-bought pesto and I’m sure it will be very good! I recommend an herby pesto made from fresh herbs and olive oil, no pine nuts or walnuts. Keep the flavors simple, so as not to take away from the tortellini.

Add the cooked and cooled tortellini to a large bowl. Then add the pesto and mix. Add the drained mozzarella and halved tomatoes. You may add the pepperoni too.

Serve this at room temperature if you don’t add the pepperoni, otherwise, keep it chilled and serve when you are ready to eat. Absolutely delicious!!
