Ingredients

  • 10 Medjool pitted dates, soaked in hot water and drained, about 2 cups
  • 2 tablespoons sugar-free maple syrup (or regular)
  • 1/3 cup almond butter, chunky or creamy (or tahini)
  • 1 cup super-fine almond flour, sifted
  • 2 teaspoons dark cocoa powder
  • 1 teaspoon vanilla extract (optional)
  • 1/4 cup semi-sweet chocolate chips, melted (more for coating balls)
  • 1 teaspoon coconut oil (optional)

Add the drained dates to a high-speed blender along with the maple syrup. Break up the dates using the agitator stick, then add the almond butter and blend on high to achieve a creamy consistency. Some bits from the dates may remain.

Transfer the date mixture to a bowl. Add the almond flour, cocoa powder, vanilla extract, and mix. In a microwave safe dish, add the chocolate chips and microwave for 1 minute and 30 seconds. Mix and add 15 second increments to heating time until smooth. Alternatively, heat in a bowl on top of a pot of boiling water until smooth.

Add the melted chocolate to the date-chocolate mixture in the bowl. If it’s too wet add more almond flour, 1 tablespoon at a time. If it’s too dry, add more almond butter to create a texture that will allow you to form balls easily.

Chill for 20 minutes, then shape into balls, about 1 heaping tablespoon. Chill in the refrigerator and enjoy.

If you wish to roll them in chocolate, seeds, nuts, or coconut, simply freeze for 20 minutes to slightly harden them. Melt more chocolate chips and add a little coconut oil. The coconut oil with make it smooth and give it some shine.

Sprinkle on crushed nuts, crushed seeds, crushed food-safe rose petals, or shredded coconut. Add whole walnuts to the tops and brush with a food-safe gold glitter to fancy these up. Add each ball to individual liners and place inside a box for a nice holiday gift.
