I recently went on a trip to Nashville, a must see city. It was fun and the outskirts of the city were so picturesque and scenic. And for those of you who know me, know I love horses, and the Nashville and surrounding area are filled with horse farms. Horse farms and horse properties in Tennessee are wildly popular, seeing as how the state is home to over 206,000 horses. Shelby County (Memphis area) actually has more horses per capita than any other county in the nation.
We had to travel early in the morning to make our flight in Philadelphia International Airport, so I prepped this combo the night before. In the morning, I gave it a quick stir and was amazed by the flavors. I don’t really like overnight oats with just milk, so I don’t usually prepare it. I loved this comb though, where you use only a hint of oats paired with yogurt and milk so the oats break down and soften. It’s creamy, healthy, and delicious! I think you’ll really love my version of overnight oats with yogurt.
In each mason jar, add 1/3 cup oats, 1/2 cup of milk or more to cover the oats, a drizzle of maple syrup, 1/2 cup sliced strawberries (or any berry), berry sauce if using, top with yogurt, and more maple syrup. Give it a gently stir to get some of the yogurt to the bottom. Cover with plastic wrap and refrigerate overnight.
In the morning, stir well, and eat! Top with cocoa nibs and cinnamon or granola or more berries.
Alternatively, you can use any fruit or berry. This is another favorite combination that I love made with blueberries. A good rule of thumb with fruit like strawberries or blueberries is to choose organic. Also, wild blueberries have more health benefits than regular blueberries.
