Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 1/3 cup whole oats
  • 2 tablespoons Zen Basil Seeds or chai seeds
  • 2 bananas mashed, plus 2 more for topping
  • 1/2 cup light brown sugar
  • 1 egg
  • 2 tablespoons maple syrup, sugar free
  • 1 cup olive oil
  • 1 teaspoon baking soda
  • 1-2 tablespoons sour cream
  • 1 teaspoon vanilla
  • splash of milk to loosen batter
  • 1/4 teaspoon cardamom, 1/2 teaspoon coriander, 1 teaspoon cinnamon, 1 teaspoon ginger
  • 9-inch springform pan greased with butter and lightly floured
  • high-speed blender
  • Topping: 1 tablespoons granulated sugar + banana slices

This is a delicious version of banana cake, with a few twists. The texture of this cake is spongy and the Zen Basil Seeds add a nice flavor along with the aromatic spices. Chai seeds and Zen Basil Seeds can sometimes get slimy, I tried to avoid that texture in this cake by blending the seeds along with the oats to a ground powder-like consistency and it worked great! I made this very healthy with a blend of flours and only used a half cup of brown sugar. It has a sweetness to it with an earthy undertone. I recommend using a springform pan so you don’t have to flip it. It is so delicious!

Here are the easy directions.

In a high-speed blender, blend the oats and Zen Basil seeds to a ground, powder-like consistency. In a bowl, combine the flours with the ground oat-Zen basil seed mixture along with baking soda. Whisk to combine.

In the stand mixer bowl, add the mashed banana and mix on medium speed to break up the chunks. Add the sugar, oil, sugar free maple syrup, vanilla, sour cream, and the spices and mix on medium speed. Last, add the egg and continue to mix until it is well combined on medium speed. Do not over mix.

Note: Go light on the Cardamom, about 1/4 teaspoon, until you are familiar with it. It’s a very potent spice and a little goes a long way. You can be generous with the cinnamon and ginger, about 1 teaspoon should be plenty though. You’ll need a tiny sprinkle of each for the topping.

Next, add the dry ingredients to the wet ingredients. Pour the batter into a greased and lightly floured springform pan.

Cut bananas lengthwise. Top the cake with the sliced bananas and mores spices, premixed in a bowl.

Bake at 350 degrees for roughly 40 minutes, until springy.

Coat the top of the cake with 1 tablespoon of granulated sugar, and broil for 1-2 minutes to caramelize the top. Keep an eye on it. Also, be sure the heat source is not directly over cake. It should be about 8-10 inches away, otherwise you may burn the top. Allow it to cool on cooling rack.
