These cookies are French Palmiers also known as Elephant Ears and are made from puff pastry. They are delicious, buttery, crunchy, melt-in-your-mouth, and will impress all of your guests. Use a refrigerated or frozen pastry (slightly defrosted) is perfectly fine and makes the process much easier than having to make the dough. You want to work with the dough while it’s cold, but not frozen, or too warm as it will not hold it’s shape. You want to make folds, not roll the dough and that will create a heart shape cookie once cut. As always practice makes perfect!

Once the pastry dough is slightly defrosted, you are ready to work with it.

First, unroll cold puff pastry on a work surface. Sprinkle sugar on both sides, really press it in with your hands.

Second, lay it down horizontally.  Fold both ends to meet in the middle. Then sprinkle another layer of sugar.

Third,  repeat the process of folding and sugaring.

Fourth, then do a final fold and sprinkle with more sugar.

Fifth, refrigerate the dough for 10-30 minutes. This is an important step.

Once dough is firm, slice 1/2-inch slices and dip the cookies in more sugar on both sides. Place on a parchment-lined baking sheet.

Bake at 450 degrees for 9 minutes, then gently flip cookies with a wide spatula and lower oven temperature to 425 degrees and bake until golden, about 4-5 more minutes. Allow cookies to cool.

Use extra caution when taking out of the oven these are VERY hot. These are absolutely delicious!
