As a child, the smell of chicken soup would emanate through out the entire house. My mom was the best soup maker. The building blocks to a good soup are: roasted chicken, a good chicken stock (store bought is fine), organic carrots, & organic onions. The rest is based on your personal preferences. In this soup, I have added spinach and corn. The longer the soup simmers the better tasting it will be. Another key ingredient to a good soup is olive oil. Be sure it is a good quality extra virgin olive oil and one used for flavoring. The trick is to saute the onions in olive oil then add the broth, and build your soup from there. White potatoes can be a nice addition in the colder months, because potatoes are hearty. Keep an eye out for my chicken soup recipe! Soups on!
