Ingredients

  • 1/2 box orzo pasta (16 ounce box)
  • one whole cooked chicken diced - no skin
  • 3/4 cup Kalamata Olives - cut into pieces
  • 1 medium vidalia onion diced
  • 1 lemon
  • a good quality extra virgin olive oil
  • fresh thyme leaves (about 1 teaspoon of more)
  • a few springs of fresh dill diced (2 tablespoons)
  • 1 teaspoon Greek Seasoning
  • 1/2 cup of a good chicken stock
  • splash of white wine (optional)

This is a Greek inspired meal to prepare for your family. Here are the directions. Boil 3 quarts of water for a half of a 16 ounce box of orzo pasta. Once the water boils, add the orzo and let it come back to a rolling bowl. At that time, add some sea salt. Let it cook according to the directions on the box. Stir so the pasta won’t stick.

In another large non-stick frying pan, add some olive oil and add a diced vidalia onion. Once the onion becomes translucent, add to that one small cooked chicken diced up, and 3/4 cup whole Kalamata olives sliced.  At this time you can add about 1/2 cup of a good quality chicken stock, a splash of white wine (optional), and the Greek seasonings along with some salt.  Squeeze a 1/2 lemon, and let this simmer about 15 minutes.

Drain the pasta and add it to the pot along with a drizzle of olive oil, and let all the flavors mix together for about 15-20 minutes more. Also, add some fresh thyme leaves, and 2 tablespoons or more of chopped dill and a few thinly sliced pieces of lemon, maybe 3. If your family does not like the lemon flavor, you can omit the squeeze of lemon and lemon slices. My daughter does not like lemon, but the 1/2 of squeezed lemon she barely tasted.

Be sure to taste it! It might need more salt or another dash of Greek seasoning. Now it’s ready to serve and enjoy among friends and family. Serve with a french baguette. Yum!
