This is a great meal for a cold winter’s day! Sometimes you want something hearty and delicious that will fill you up, and this is one of those meals. Here are the directions.
Start by boiling 2 cups of water in a small pot. Then, dice a half of a sweet onion, and saute in olive oil until translucent. Once the onion is soft, add about 1/4 cup of fresh corn and saute those for a few minutes. Once the water comes to a boil, add in about 1/2 – 3/4 cup of quick Grits (by Quaker Oats). Stir the grits frequently and keep the heat low and the lid on while it’s cooking about 5-6 minutes. Add some sea salt. You can stir in about 2 tablespoons of whole milk and a teaspoon of butter to make it creamy.
Once the grits are done, add it to the frying pan and cook everything about 10 minutes. While it is cooking, add about 1/4 cup of grated parmesan cheese. Once it has simmered for about 10 minutes, taste it and be sure it has the right balance of flavors. You might want to add a little more cheese at this point. Then pour some in a large bowl and add parsley flakes, and more cheese on top. This is heartwarming and so yummy. It is a great meal if you are on a budget too! You can serve this for dinner with garlic and butter sautéed shrimp like they do in the South, add scallions then!! YUMMY
