Ingredients

  • 1 small box organic baby arugula
  • 2 handfuls organic baby spinach
  • 1/4 cup cranraisins
  • 3/4 cup sweet organic corn
  • a few sprinkles gorgonzola cheese (break up any chunks)
  • 2 cups brown/wild rice medley (microwavable cups are perfect for this!)
  • 4 large hard boiled eggs warm (halved)
  • sea salt
  • Dressing: i like Garlic Expressions or whisk together olive oil, apple cider vinegar, salt, and a few drops of honey

This salad is a winner! Try to find arugula that doesn’t have a strong bitter taste. I like Earthbound. This is a great salad to prep the night before for your next day’s lunch, because it will keep and then the next day just add a few fresh greens. Here are the directions.

Start with a small box of organic baby arugula, rinse well and lay on a paper towel to dry. Then wash and dry a few handfuls of organic baby spinach. Gently pat these to dry them, they will bruise easily.  Then fill a pot up with cool water and completely cover 4 eggs with the water. Bring water to a boil and let eggs cook for 10 minutes, and drain. You will have  perfectly cooked hard boiled egg. Let the eggs cool.

Once arugula and spinach are dry add them to a large bowl.  Then add to that about 3/4 cup sweet organic corn, a few sprinkles of gorgonzola cheese, and about 1/4 cup of  cranraisins. Mix well. Earthy bowl of goodness ingredients

Toss gently. Peel your eggs and cut them in half. And add a sprinkle of sea salt.

 

 

Next prepare about 2 cups of cooked brown rice or a brown rice/wild rice blend. I use the microwavable kind, to make things easy. This salad will taste best with brown rice/wild rice blend.Brown rice/ wild rice Mix well and add sea salt.

Then gently toss together the rice with the salad and toss with your favorite dressing. Then lay your eggs on top of the salad for a beautiful presentation. I recommend Garlic Expressions Salad Dressing, it’s our favorite! Serve while the rice is still warm. YUMMY!!! It will fill you up all day and you will feel extra healthy!
